ÜBER FINCA VILLA YOLANDA
Nestled in the rolling green hills of the Montecillos region in Honduras lies Finca Villa Yolanda, owned by Herly Urquia, a passionate coffee farmer who has perfected his craft for decades. He founded Finca Caviflor in 1970, followed by Finca La Rosita, and then Finca Villa Yolanda in 2010. Around 30 hectares are cultivated, home to over 60,000 coffee trees. Approximately 20,000 of these grow on Finca Villa Yolanda, primarily the Catuai and IHCAFE 90 varieties. Plantains, mangoes, bananas, oranges, and even strawberries thrive among the coffee trees – a diverse ecosystem teeming with hummingbirds.
What's particularly exciting is that Herly is experimenting with new fermentation techniques to further refine the character of his coffees. For this lot, he opted for the honey processing method. In this process, some of the pulp remains on the bean, resulting in intense sweetness, delicate fruit notes, and a silky texture. Honey process coffees from Honduras are still relatively rare – making this lot all the more special.
The Montecillos region is famous for its dramatic changes in altitude and cool nights, which allow the coffee cherries to ripen slowly and evenly. The result: clear aromas, balanced sweetness, and a vibrant, fruity freshness.
