We roast our coffees on a Probat Probatone 5 kg drum roaster. In general, we prefer a light to medium roast, as we believe coffee can only develop its full potential when given enough time during roasting. For us, it’s not just about flavor — it’s about preserving the origin and character of each bean. We aim to create a balanced and clear cup profile that highlights the unique nature of every coffee while allowing its complexity and depth to truly shine.

For us, coffee roasting is more than just a craft – it’s an art form where precision, curiosity, and passion come together.
Every stage of the roast influences the final flavor and the range of aromas in the cup. That’s why each coffee we roast has its own unique profile, developed with care and attention to detail to express its true character. At the cupping table, we fine-tune and taste until we’re sure we’ve brought out the essence of the coffee — its balance, clarity, and individuality.

GREEN COFFEE

Green coffee is the foundation of every cup and plays a decisive role in shaping the final flavor profile. The quality of green coffee is influenced by many factors — altitude, soil composition, climate, and processing method. Each of these variables affects the aromas and nuances that later emerge during roasting. Harvest timing is crucial — coffee cherries must be picked at their peak ripeness to ensure optimal flavor development. Once harvested, different processing methods are used — from natural sun-drying to fully washed processes where the fruit pulp is removed. Each method imparts its own distinctive characteristics, shaping the coffee’s unique personality and taste.
