This outstanding Pink Bourbon coffee comes from the Villamaría region in Caldas, Colombia — an area shaped by volcanic soils, lush landscapes, and ideal conditions for producing high-quality specialty coffee. The coffee cherries are harvested by 30 to 50 small producer families around Villarazo and delivered to the Jamaica processing station.
What makes this project unique is its collaborative approach: instead of processing the coffee themselves, farmers deliver freshly picked coffee cherries directly to the station. While still uncommon in Colombia, this system reduces labor-intensive processing steps and allows producers to receive more stable and reliable prices for their harvest. The result is a more sustainable supply chain that supports entire local communities.
Pink Bourbon itself is considered one of the most remarkable coffee varieties in Colombia. Believed to be a cross between Red and Yellow Bourbon, it is valued not only for its resistance to coffee leaf rust but especially for its exceptionally elegant and expressive cup profile. Cultivating Pink Bourbon requires patience and careful separation from other varieties in order to preserve its distinctive color and unique flavor characteristics. The seedlings for this lot are grown at El Fénix farm in Quindío.
After harvest, the cherries are carefully sorted and depulped on the same day. The coffee then undergoes a 12–24 hour fermentation before being thoroughly washed and slowly dried on raised beds under controlled conditions.
