The Villamaría Community comprises 50 smallholder farming families around Villarazo, Caldas, who produce these exceptional harvests. The Water Pillow method, in which the coffee cherries ferment for approximately 48 hours in a vacuum, results in fruity, complex profiles. The beans then dry for 20 days in their husks on raised beds in the sun.
