This Natural coffee comes from the Mundayo Washing Station in West Arsi, Ethiopia, a region with ideal conditions for high-quality coffee cultivation: high altitudes, fertile soils, and a subtropical climate. Around 750 smallholder farmers deliver their carefully picked cherries here. The processing is entirely traditional: the cherries are sorted, cleaned of dirt, and then dried in the sun on raised beds for approximately 21 days. As with many Ethiopian coffees, these are heirloom varieties, cultivated for generations – diverse, original, and aromatically complex.
And another fun fact: Most farmers in this region work entirely without chemical fertilizers or pesticides – simply because they don't have access to them. Here, coffee grows as it should – completely naturally.
